Pumpkin Pie ProYo

When I want to go ham on pint of ice cream (which is almost every night), I make Protein Frozen Yogurt (ProYo) instead. With the addition of one special ingredient, your usual icy protein shake is transformed (and expands!) into a creamy frozen yogurt consistency. What is that special ingredient? XANTHAM GUM. Xantham Gum is a plant-based thickening and stabilizing agent. It works as a thickener by increasing the viscosity of liquids and batters (think double the volume) and it creates a creamy texture (think frozen yogurt). Xantham gum can be found at specialty food markets (Whole Foods, Sprouts, Wheatsville, etc).

This shake tastes like pumpkin pie without all the fat and carbs. Sometimes, if i have more carbs left over for the day I will replace the pumpkin with banana and raw cacao powder. But, if you just have a ton of protein left at the end of the night, this is my go to!

Makes 1 serving (but sometimes I make it twice because it is THAT good and sometimes, one just isn’t enough)

Ingredients:

  • 1 scoop snicker doodle or vanilla protein powder (Dymatize Nutrition Iso Whey in Gourmet Vanilla or PEScience Protein in Snickerdoodle)
  • 1/4 cup pumpkin puree
  • 1 cup unsweetened vanilla almond milk
  • 1-2 tbsp pumpkin pie seasoning (or a combination of cinnamon and all-spice will do)
  • 1/2 tsp xantham gum
  • 1-2 cups ice

Directions:

Use the largest blender you have. Fill it half way with ice. Add the rest of your ingredients. Blend for 45 seconds. Watch and wait for your ProYo to come to life. It will literally double in volume. It is glorious!

MACROS: 180 calories, 26.5 g protein, 9 g carbs, 3.2 g fat
