Buffalo and Blue Chicken Sandwich

Buffalo and Blue Chicken 3

Here is another take on my classic crockpot shredded chicken. Simply swap the salsa verde for Frank’s Red Hot Buffalo Wing Sauce (calorie free, might I add), cook for 4 hours and there you have it, Buffalo Shredded Chicken! Topped with Bolthouse Farm’s Chunky Blue Cheese Yogurt Dressing your taste buds will be singing and you won’t even miss those greasy hot wings from your favorite sports bar.

Recipe makes 8 servings.

Ingredients:

  • 1.5 lbs boneless skinless chicken breast (roughly 4 breasts)
  • 12oz. bottle Frank’s Red Hot Wing’s Sauce, Buffalo 
  • 1 bottle Bolthouse Farm’s Chunky Blue Cheese Yogurt Dressing
  • Sprouted grain hamburger bun (I use Engine 2 Plant-Strong Organic Sprouted Ancient Grains Burger Buns)

Directions:

  1. Place chicken in crockpot.
  2. Top chicken with the whole bottle of Frank’s Red Hot Wing’s Sauce.
  3. Cook on high for 4 hours.
  4. Shred chicken with two forks.
  5. Toast the bun.
  6. Place 3oz. of chicken on toasted bun and top with 2 tbsp Bolthouse Farm’s Chunky Blue Cheese Yogurt Dressing.

MACROS for entire sandwich (1 bun, 3oz chicken and 2 tbsp Bolthouse Farm’s Chunky Blue Cheese Yogurt Dressing): 289 calories, 31 g protein, 6 g fat, 26 g carbs
